Harvest: by hand at the first half of October.
Wine making process: after manually harvesting in boxes, the grapes brought to the cellar are destemmed and fermented with wild yeast on the skins without the control of temperature. After
fermentation it stays in stainless steel tank with its lees for a period of at least two years. It is bottled
unfiltered, and then it ages for a period in bottle.
